Black Chana Stuffed Lachha Paratha ( Multi Layered Crispy Soft , Stuffed Paratha ) with Dahi
For outer dough- Whole wheat flour ... 2 cup's
- Rice flour ..1 tblsp
- Ghee ,,,1 tblsp
- Salt to taste
- Water as needed to prepare a soft dough
- Black Chana ... 1 cup
- Potato ...1
- Green chilly ...3
- Red chilly flakes ... 1/2 tsp
- Onion ..1 medium
- Ginger ...1 inch piece
- Amchur/Dry Mango Powder.. 1 tsp
- Ghee ... 2 tsp
- Coriander leaves ..few
- Salt to taste
To prepare outer dough .
In a wide bottomed vessel add whole wheat flour , rice flour , salt n ghee . Mix well. then add little by little water n Knead it to a soft dough ,and let it rest for one hour.
To prepare stuffing
Wash n soak chana overnight ..Pressurec cook it till soft ..Strain n keep aside .
Wash n pressure cook Potato .. cool, peel it ..
in a vessel add the boiled chana n boiled peeled potato n mash well ... keep aside .
Grate ginger n onion .. Finely chop green chilly n coriander leaves . .
Add ghee in a kadai , add grated onion and grated ginger n fry it well ... Now add mashed chana , potato mixture and fry it well adding chopped green chilly , red chilly flakes n salt .. When it is fried well add dry mango powder n chopped coriander leaves , mix well ..Stuffing is ready .. allow it to cool .
To Make laccha stuffed paratha .
Take the dough and knead it again to make it smooth . Take out a portion,make a flattened ball and roll it in flour like chapathi size n then spread ghee on it . Now start making fleets ( like paper fan ) n then coil , Take this round coil on your palm and make space for stuffing .Put stuffing inside it n seal carefully n very gently .Roll gently such a way that the layers are formed .
Heat tawa and apply ghee..Place the stuffed laccha paratha on it ... Flip n gently press adding little ghee ... cook on both sides till crisp till golden brown .
Serve with dahi/Pickle /Chutney .
