Ukde seeth , Salla Upkari ( Brined raw jackfruit upkari ) , Ambe Upkari , Jeev kadgi ( Bread fruit ) Tawa Rawa fries , Muga Saarupkari , Ambuli nonche n Mango Pieces
- Salla /Brined /salted Raw Jackfruit Pods - 2 cups
- Oil - 2 tsp
- Mustard seeds- 1/2 tsp
- Dry red chilles - 3
Method
Soak the brined ( salted ) Jackfruit in water for about 1 hour .Wash well to remove the excess salt .
Slice them into 1 inch pieces .
In a kadai add oil, splutter mustard seeds, add torn dry red chilles n fry for a second, then add the sliced raw jackfruit pieces n fry for a while .Add little water , cover and cook till done .
Note : add salt only if required as its already been salted .
Ambe upkari ..A typical amchi seasonal delicacy ! its sweet ,spicy n tangily yummz !
- Ambe gointa ( a small variety of mango which is prefered for this,as its sweet n sour ) ..if not use any other variety .. 8
- Green chillies...2
- jaggery..Goose berry size
- Rice flour or maida..1 tsp
- water..1 cup
- salt to taste
Seasoning
- Oil..1 tsp
- Mustard seeds..1/2 tsp
- Curry leaves..1 sprig
- Dry red chilly ..2
Method
Jeev kadgi ( Bread fruit ) Tawa Rawa Fries
In a bowl add the red chilly powder, turmeric powder, rice flour , hing ,salt n sliced bread fruit pieces .. mix well . keep aside for 5 minutes .
Run the marinated pieces over rawa .
Heat a tawa , smear little oil n shallow fry on both sides till crisp.
- Jeev kadgi ( Bread fruit ) Slices - 10
- Red chilly powder- 1 tblsp
- Turmeric powder- 1/2 tsp
- Rice flour - 3 tsp
- Hing /Asafoetida- 2 pinch
- Semolina /Rawa - 1 tblsp
- Salt to taste
In a bowl add the red chilly powder, turmeric powder, rice flour , hing ,salt n sliced bread fruit pieces .. mix well . keep aside for 5 minutes .
Run the marinated pieces over rawa .
Heat a tawa , smear little oil n shallow fry on both sides till crisp.
Muga Saarupkari ( whole Green Gram Rasam )
Wash the whole green gram n pressure cook it ... mash it lightly ..
Boil the cooked Whole green gram with slit green chilly adding salt n then season .
- Whole Green Gram ... 1/2 cup
- Water ..3 cups
- Green chilly .. slit 3
- Salt to taste
- Oil ..1 tsp
- Mustard seeds ..1/2 tsp
- Dry red chilly ..1 broken
Wash the whole green gram n pressure cook it ... mash it lightly ..
Boil the cooked Whole green gram with slit green chilly adding salt n then season .
