Banana Stem Masala Palya
Banana stem - 1 ( after chopping nearly 1 cup )To grind to a coarse masala
- Roasted dry red chillies- 4
- Grated coconut- 5 tsp
- Cumin seeds- 1/2 tsp
- Methi /Fengureek seeds- a pinch
- Turmeric powder- 1/4 th tsp
- Jaggery -chick pea size
- Tamarind -Tamarind seed size
- Salt to taste
- Oil-2 tsp
- Mustard seeds- 1/2 tsp
- Urid dhal- 1 tsp
- Chana dhal-1tsp
- Hing - a pinch
- Curry leaves - 1 sprig
Wash the banana stem , remove the tough outer skin . Cut it into 2 inch cubicles .Immerse in water to prevent then from blackening .
Grind roasted dry red chillies, cumin seeds, methi seeds, turmeric powder, jaggery n tamarind to a very fine paste n just before removing the ground paste add the grated coconut n grind just for 1/2 a minute ..This has to be coarse masala .
In a kadai add oil, splutter mustard seeds, add urid chana dhal n fry for a while, add hing, curry leaves n add in chopped banana stem , very little water n salt .. close the lid n cook till all the moisture evaporates ( dont over cook n make It mushy , it has to be cooked but then retain the crunchiness ) Then add the coarsely ground masala n stir well .
Kulithu , Masinga sanga , Gabbo koddel ( Horse gram , drumstick n Banana tree fiber spicy coconut based gravy )
- Kulithu ( Horse Gram ) .... 1/2 cup
- Drumstick ..2
- Tender banana fiber chopped to 2 inch pieces ..1 cup
- Salt to taste
To grind to a fine paste
- Grated coconut ... 1 cup
- Roasted dry red chillies... 6
- Tamarind ..Tamarind seed size
- Oil..2 tsp
- Crushed garlic flakes ..6
Method
Wash horse gram n Pressure cook it for about 8 whistles or till cooked ( dont over cook n make it mushy )
Wash drumstick , chop it to 2 inch pieces , remove the fiber .
Cook the chopped banana fiber n chopped drumstick in little water .
Grind grated coconut, roasted dry red chillies n tamarind to a fine paste .
Add the ground paste to the cooked stuffs n boil well adding salt .
Then give the seasoning .
Horse gram saaru /Rasam with garlic seasoning
Retain the water in which Horse gram was cooked ... to it add slit green chilly 1 or 2 , boil well adding salt . Give seasoning with crushed garlic n dry red chilly .
Instant dry Batate vaagu !
- Potatoes -3 medium sized
- Tomatoes-2 small
- Red chilly powder- 2 tsp
- Hing - 1/4 th tsp
- Mustard -1/2 tsp
- Grated coconut-1tsp
- oil-2tsp
- salt to taste
Method
Wash n pressure cook potatoes . cool , peel the skin n cut it into cubes .
In a kadai add oil,splutter mustard seeds , add hing, tomatoes n fry till the raw smell goes n its mushy add in red chilly powder , salt n cooked chopped potatoes , grated coconut n mix well !
Gabbo tawa fries /Banana Stem Tawa fries
Method
In a bowl add chilly powder, turmeric powder, hing n salt ... Add the banana roundels n sprinkle little water ,mix well . .. Set aside for about 10 mts ..
Heat a dosa tawa,just drizzle oil ... Run the marinated banana stem over rice flour n place it side by side on the heated tawa n roast on both the sides .
- Gabbo/ Banana stem sliced roundels .... 8
- Red chilly powder...2 tsp
- Turmeric powder ..1/4 tsp
- Hing/Asafoetida..2 pinch
- Salt to taste ..
- Rice flour ..1 tblsp
- Oil ..just little for tawa fries .
Method
In a bowl add chilly powder, turmeric powder, hing n salt ... Add the banana roundels n sprinkle little water ,mix well . .. Set aside for about 10 mts ..
