Boiled rice Undi /Ukdo tandulu ( Boiled rice dumpling's )
- Boiled Rice /Ukdo tandulu ..2 cups
- Grated coconut..3 cups ( more the grated coconut soft will be the undis )
- Salt to taste .
Seasoing
Oil..1 tblsp
Mustard seeds..1 tsp
Urid dhal..2 tsp
Fenugreek /methi seeds.. 1 tsp
Curry leaves..2 sprig's
Method
Wash n soak the boiled rice for nearly 6 to 8 hours ( i soaked overnight ).
Drain n grind it with grated coconut to a paste adding very little water as the batter has to be really thick . Remove add salt n mix well .
In a kadai add oil splutter mustard seeds , then add urid n fenugreek seeds n fry for a second till it changes its color n then add curry leaves n add the ground paste n stir continuously n see to it that no lumps are formed. Stir well till the mixture thickens . Switch off . Remove the kadai from the gas stove ... n mix well again with wet hands ( this makes the batter smooth n undis soft ) . Then make large lemon sized equal balls of the batter with wet fingers n make a depression in the centre .
Steam for about 15 to 20 mts .
Serve hot with any spicy dip's .
