Litti Aaloo Choka
Litti
For the dough- Wheat Flour ..2 cup's
- Ghee /Oil..1 tbsp( i used ghee )
- Baking powder..1/4 th tsp
- Salt to taste
- Water as needed to prepare a soft dough
For the filling
- Sattoo flour ..1 cup( i used Manna brand )
- Ajwain/Carom seeds..1/4 th tsp
- Green chilly ..1
- Pickle masala ( use only the masala) .. 2 tsp ( i used priya mango pickle masala)
- Garlic cloves..3
- Ginger ..1/4 th inch
- Onion..1/3 rd cup
- Coriander leaves.. 1 tblsp chopped
- Lime juice ... 1 tsp
- Oil..2 tsp
- Water a little just to sprinkle
- Salt to taste
Method for Litti
In a wide bowl add wheat flour, salt , baking powder n ghee , add enough water , knead well n prepare a soft dough .. keep aside for about 15 mts .
Method for filling
Finely chop green chilly, onion , ginger , garlic and coriander leaves .
In a bowl add sattoo flour, ajwain, chopped green chilly, onion, ginger , garlic, coriander leaves, pickle masala, salt, oil, lime juice n sprinkle very little water n mix well ( the mix should be like bread crumbs ) not too dry nor watery .
Divide the dough in to equal medium sized golf ball's and dust with wheat flour. Take one ball and roll it using a rolling pin to a small poori size. make sure the center thicker and edges little thin.
Place 2 tsp of the filling in the centre of the rolled poori n slowly press the masala down using your finger and pull the dough up and close the edges. Repeat so for all the dough balls .
Heat oil in a kadai , n deep fry them till done .
Aaloo Choka
- Aaloo/Potatoes... 4
- Onion ..1
- Green chilly ..2
- Dry red chilly..2
- Garlic cloves ..3
- Ginger..1/4 th inch
- Oil..1 tblsp
- Red Chilly Powder – 1 tsp
- Cumin Powder – 1 tsp
- Coriander Powder – ½ tsp
- Salt to taste
Garnish
Green chilly ( saute in little oil )..1
Method
Wash n pressure cook the potatoes .Cool, remove the skin n mash well . Add salt n mix again . Keep aside
Chop onion n green chilly, Grate ginger n garlic cloves .
In a kadai add oil, add torn dry red chilly n saute for a while, then add chopped onion , n saute till onion turns pink. Add chopped green chilles, grated ginger n garlic n saute for sometime ..Add all the powders, mashed potatoes n mix well . Garnish with sauteed green chilly .
