Brinjal Cooked in Rasam Powder .

Brinjal Cooked in Rasam Powder . 

  • Any variety brinjal ...3 ( i used purple long ones )
  • Oil..1 tbsp
  • Mustard seeds ..1/2 tsp
  • Urid dhal..1/2 tsp 
  • Hing/Asafoetida ..1 pinch
  • Onion..1 medium( chopped )
  • Tomato..1 ( chopped ) 
  • Tamarind paste ..1 tsp ( put a goose berry sized tamarind in little water for 20 mts n extract the juice ) 
  • Rasam Powder..2 tsp 
  • Coriander leaves chopped ..2 tsp 
  • Salt to taste .


Method 
Wash n chop the brinjal's to 2 inch pieces . Put in water for sometime . 

In a kadai add oil, splutter mustard seeds, add urid dhal n stir till it turns light brown , then add hing , chopped onion n cook till pinkish red . Add chopped tomatoes n cook till mushy , Add rasam powder n stir for a while .Add the tamarind paste , salt n chopped brinjal n water n cook till done . Finally garnish with coriander leaves .

Goes well for Rice, Chapathis/Pulkas .
