Brinjal Cooked in Rasam Powder .
- Any variety brinjal ...3 ( i used purple long ones )
- Oil..1 tbsp
- Mustard seeds ..1/2 tsp
- Urid dhal..1/2 tsp
- Hing/Asafoetida ..1 pinch
- Onion..1 medium( chopped )
- Tomato..1 ( chopped )
- Tamarind paste ..1 tsp ( put a goose berry sized tamarind in little water for 20 mts n extract the juice )
- Rasam Powder..2 tsp
- Coriander leaves chopped ..2 tsp
- Salt to taste .
Method
Wash n chop the brinjal's to 2 inch pieces . Put in water for sometime .
In a kadai add oil, splutter mustard seeds, add urid dhal n stir till it turns light brown , then add hing , chopped onion n cook till pinkish red . Add chopped tomatoes n cook till mushy , Add rasam powder n stir for a while .Add the tamarind paste , salt n chopped brinjal n water n cook till done . Finally garnish with coriander leaves .
Goes well for Rice, Chapathis/Pulkas .
