Ukde Seeth, Dalithoy, Tendle Talasani, Matti Gulla ( Seasonal Mlorean Brinjal ) Tawa Rawa Fries n Matti Gulla Bhaji
Dalithoy
- Toor dal - 1 cup
- Green chilly - 4 or according to the taste
Seasoning
- Oil/Ghee -1 tsp
- Mustard seeds - 1 tsp
- Curry leaves - 1 sprig
- Dry red chillies -2
- Hing/Asafoetida water- 1 tsp
- Salt to taste
Method
Pressure cook toor dal with 1 tsp of oil . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .Add water for desired consistency ( medium , neither too thin nor too thick )
In a seasoning pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water . Mix well
Tendle Talasani ! Ivy gourd sauteed in garlic !
Method
wash n cut d end points of Ivy gourd n crush them lightly ..apply salt n keep it aside for 10 mts ..
In a kadai add oil, crushed garlic flakes ,when it turns golden brown add dry chilly flakes n fry for sometime .. now squeeze d ivy gourd n roast it .. sprinkle water n cook it covered , on low flame ! saute in between , n cook till the veggies turn light brown !

- Garlic flakes-10 or12
- Oil - 10 tsp
- Dry red chillies-4
- water- little
- salt to taste

Matti Gulla ( Seasonal Mlorean Brinjal ) Tawa Rawa Fries
- Matti Gulla ( Seasonal Mlorean Brinjal )... sliced into roundels ... 10
- Red chilly powder ...2 tsp
- Turmeric powder ..1/4 th tsp
- Hing/Asafoetida ... 2 pinch
- Rice flour ..1 tblsp
- Salt to taste
- Rawa/Semolina ...1 tblsp
- Oil.. little to tawa roast
In a bowl add red chilly powder , turmeric powder, rice flour hing, n salt add little water n mix well ...add the brinjal slices n mix well ..keep aside for sometime .
Heat a dosa tawa , drizzle oil..run the marinated brinjal slices over rawa/ semolina n place on tawa side by side n roast on both sides .
Gulla Bhajji ( Roasted Brinjal Gojju With Bimbul/Bilimbi )
- Gulla / Seasonal Round Brinjal ( Mattu Gulla ) ..if not any other round variety .. 3
- Bimbul/Bilimbi..3 or 4
- Green Chilly ...4 ,chopped
- Salt to taste
Season
- Coconut oil ..1 tsp
- Mustard seeds ..1/2 tsp
- Curry leaves..1 sprig
Garnish
- Chopped coriander leaves..2 tsp
- Hing water ..1 tsp ( i use solid hing .so soak it in little water for sometime n dissolve well )
Method
Wash the Round Brinjal's and wipe them , apply oil n directly roast them over the flame,turning around till it shrinks ... Cool n remove the skin ... Mash them well n Keep aside .Wash n cook bilimbi in litlte water till soft .Cool it . mash it well .
In a bowl, add chopped green chilies , mashed brinjal's , mashed bilimbi's , salt n mix well with hands . Add the seasoning n then garnish ..Mix well again .
