Baingan Bertha ..Version 1 

  • Bertha Baingan/Purple huge Eggplant ...1 huge 
  • Onion chopped  ...2 
  • Tomatoes chopped ...3  
  • Green Chilly ..2 chopped 
  • Oil..1 tblsp
  •  Cumin seeds ..1/2 tsp 
  • Chopped Ginger ...1 tsp 
  • Red chilly Powder.. 2 tsp
  •  Coriander leaves Chopped .. 2 tsp
  • Salt to taste 


 Method ..
Wash ,pat dry the egg plant , apply oil n roast it direct on flame . turn over n roast on all sides . Once it shrinks .. Cool .. Remove the skin n mash it well.. Keep aside 

Add oil in a kadai , add cumin seeds .stir it , add chopped onions n saute till its cooked , add chopped ginger , chopped green chilly n fry for a while. Add tomatoes chopped n cook till the raw smell goes n it turns mushy . Add red chilly powder, salt n mashed egg plant n cook for a while . Then garnish with chopped coriander leaves n mix well .. 

Goes well with Rice/Rottis/Paratha's .
