Baingan Bhartha with Mutter / Roasted Mashed Brinjal With Fresh Green Peas ..Version 2 
  • Bertha Baingan/Purple huge Eggplant ...1 huge
  •  Fresh Green Peas/Mutter... 1 cup 
  • Onion chopped  ...2 
  • Tomatoes chopped ...3  
  • Green Chilly ..2 chopped 
  • Oil..1 tblsp
  •  Cumin seeds ..1/2 tsp 
  • Crushed  Ginger Garlic paste ...1 tsp 
  • Red chilly Powder.. 2 tsp 
  • Garam Masala ...1/2 tsp 
  •  Coriander leaves Chopped .. 2 tsp
  • Salt to taste 


 Method ..
Wash ,pat dry the egg plant , apply oil n roast it direct on flame . turn over n roast on all sides . Once it shrinks .. Cool .. Remove the skin n mash it well.. Keep aside. 


Pressure cook green peas for 1 whistle 

Add oil in a kadai , add cumin seeds .stir it , add chopped onions n saute till its pinkish red , add crushed ginger garlic paste n stir for few mts  , then add chopped green chilly n fry for a while. Add tomatoes chopped n cook till the raw smell goes n it turns mushy . Add red chilly powder, salt n mashed egg plant , cooked green peas n cook for a while . Add garam masala n stir for few mts .. Then garnish with chopped coriander leaves n mix well .. 

Goes well with Rice/Rottis/Paratha's .
