Tomato Soup , Masala Papad, Baby Corn Fritters, Tawa Butter Naan, Mushroom Pulov. Cucumber Raitha, Mushrrom Mutter Masala n Eggless Pineapple Pastry.

Tomato Soup , Masala Papad, Baby Corn Fritters, Tawa Butter Naan, Mushroom Pulov. 
 Cucumber Raitha, Mushrrom Mutter Masala n Eggless Pineapple Pastry.

Tomato Soup with Bread Croutons

  • Fully ripened red tomatoes - 4 to 6 
  • Oil -2 tsp 
  • Onion -1, chopped finely 
  • Garlic Flakes - 6 to 8, chopped finely 
  • Cinnamon stick -1/2 inch piece
  • Cloves -3
  • Corn Flour -2 tsp
  • Water -1/2 cup
  • Pepper Powder-1/2 tsp 
  • Salt to taste
  • Butter  -1 tsp

For Bread  Croutons

  • Bread slice -4
  • Oil as per needed to deep fry
Method to prepare soup
Boil water , wash n add tomatoes into it ..keep covered for about 1/2 an hour .

Remove the skin of the tomatoes , mash with hands or slice them n blend it to a fine puree .

In 1/2 cup water add corn flour n mix well as to no lump is formed .

In a kadai add oil , add cinnamon stick n cloves ..stir for few seconds . Add chopped onion n fry till reddish brown , add chopped garlic flakes n fry for sometime till it gives a nice aroma , add tomato puree n little water, salt  n boil for sometime n then add the corn flour mix , stir  well n give a quick boil

Method for Bread Croutons
Cut the edges of the bread n then make cubes of it .
Heat oil in a kadai n deep fry the bread cubes ... Remove n place on tissue paper to soak extra oil ..

Take the soup in a bowl add pepper powder, little butter n then add bread Croutons n serve hot .

Note : Adjust salt n pepper powder as per taste . 

Masala Papad 
  • Lijat Papad - 2 
  • Chilly powder- 1/2 tsp
  • Salt to taste 
  • Onions ,finely chopped - 4 tsp
  • Tomatoes , finely chopped -4 tsp 
  • Chopped coriander leaves- 3 tsp 
  • salt to taste 

Either Deep fry or roast the papad ... 

Just before serving , sprinkle chopped onions, chopped tomatoes , chopped coriander leaves , chilly powder n salt over the papad . 

Crispy Baby Corn  Fries 
Baby Corns -8 
Rice flour -3 tsp 
Corn flour -2 tsp 
Red Chilly powder- 1 tsp 
Hing /Asafoetida - 2 pinch 
Turmeric powder -1/4 th tsp 
Salt to taste 
Oil for deep frying
Slit baby corn .
In a bowl add  Rice flour, corn flour, red chilly powder, hing, turmeric powder  n salt .. Add the slit baby corns n mix well ..Sprinkle little water n marinate for few mts . 

Heat oil in a kadai , drop in marinated baby corns n deep fry till crisp few at a time  

Tawa Butter Naan
  • Maida/All purpose flour -4 cups, 
  • Milk-1 cup,
  •  Baking powder-1 tsp,
  •  Baking soda-1/2 tsp, 
  • Sugar -2 tsp, 
  •  Curds-2 tblsp..
  • Oil 2 tblsp, 
  • salt -to taste,
  • water as required
  • Butter-2 tsp,to brush 


Sieve Maida with baking soda, baking powder n salt ..add sugar, curds, milk, n water..knead well for about 10 mts  ..apply oil n keep covered  under moist cloth for an hour..

After an hour , knead the dough again to smooth n elastic . 

Pinch a ball sized dough and flatten., Gently Roll to oval shape or any desired shape using rolling pin , 

Brush little water on the rolled  naan , gently  place on the heated tawa , Now after a few seconds .. flip the tawa upside down n cook naan directly on flame , till they turn golden brown ..gently scrape the naan from bottom and remove.
n brush some butter.

Mushroom Pulov 

  • Mushroom - 1 packet
  • Basmathi Rice- 1 cup
  • Water - 2 cups
  • Ghee+ oil- 2 tsp Each
  • Onion -1
  • Tomato -1
  • Mint leaves- a handful
  • Cloves- 4
  • Cinnamon stick- 1/2 inch
  • Bay leaf - 1
  • Cashew nuts slit-10
  • Green Cardamom pods- 3
  • Turmeric powder- 1/4 th tsp
  • Salt to taste

To grind to a fine paste

  • Green chillies- 2 or according to the spice
  • Onion - 1 small
  • Garlic cloves-3
  • Coriander leaves- 1 tblsp
  • Aniseed-1

Wash basmathi rice n soak for about 20 mts.

Wash , clean n slice  mushrooms .

Slice onions , chop tomatoes n mint leaves . 

Grind all the ingredients meant to grind to a fine paste .

In a pressure cooker add ghee + oil , add cloves, ,Cinnamon  stick, cardamom pods,cashew nuts , bay leaf n fry for a while ... Add sliced onions n fry till pinkish red , add chopped tomatoes n cook till mushy . Add the sliced mushroom n saute for a while, add ground masala n fry for two minutes along with turmeric powder . Add the soaked rice n fry again for a minute or two . Add water , chopped mint leaves, salt n mix well . Pressure cook for 2 whistle 

Cucumber Raitha 
  •  Fresh Tender  Cucumber -1
  • Onion -1 small 
  • Green chilly -1 
  • Fresh Curds -1 cup 
  •    Pepper Powder -1/2 tsp
  • Cumin Powder -1/2 tsp 
  • Salt To Taste

Garnish Finely Chopped coriander leaves - 2 tsp 

 Wash the  cucumber, peel the skin n chop into small pieces . Chop onion into small piece , chop green chilly finely n set aside .  
In a bowl, add fresh curds , churn it  to get a smooth consistency.add chopped   cucumber , chopped onion , chopped green chilly , pepper powder, cumin powder , salt n  mix well.
Garnish with coriander leaves . 

Mutter Mushroom Masala 

  • Green peas..1  cup
  • Mushrooms..1 packet
  • Oil..2 tblsp
  • Green Cardamon..3
  • Cinnamon ..1 inch
  • Onions..2 large
  • Ginger Garlic paste ..1 tsp
  • Tomato Puree..1/2 cup
  • Red Chilly Powder..2 tsp
  • Coriander powder.2 tsp
  • Turmeric powder.. 1/2 tsp
  • Garam Masala powder..1 tsp
  • Cashew nut paste ..1/2 cup ( dissolved in 1 cup of water ) 
  • Water ..1 cup  
  • Salt to taste .

Wash green peas n Mushrooms ,,Chop Mushrooms n onions . . '

Heat oil in a kadai add green cardamom, Cinnamon n onions n saute till light golden brown . Add ginger garlic paste n saute for a second then add tomato puree n again fry for a while .Add all the powders along with salt n cook till the oil leaves the masala . Add the cashew nut paste water n stir well . then add a cup of water , add green peas n chopped mushrooms n cook till done . 

Egg less Pineapple Pastry
  • All purpose flour /Maida -200 gms
  •  Condensed Milk -200 gms
  • Unsalted Butter -1/2 cup at room temperature .
  • Baking Powder- 1 tsp
  • Baking Soda -1 tsp
  • Pineapple essence - 1 tsp
  • Fresh Pineapple Juice -1 cup

Sugar Syrup

  • Sugar -2 tbsp
  •  Water -1/4 th cup

Method .
  In a thick bottomed pan , add sugar n water ..boil till sugar melts  . Keep aside to cool

For Frosting

  • Fresh cream -300 ml
  • Powdered Sugar -5 tsp
  • Pineapple Essence -1 tsp

Keep cream in freezer for about 1/2 an hour .

Add powdered sugar n pineapple essence to the chilled cream n beat well till the cream is thick n forms peak . Keep in fridge till use.

Pineapple pieces -1 cup
Cherry -8 to 10. halved

Sieve the flour, baking soda n baking powder . Keep aside

In a bowl add the condensed milk, butter, pineapple essence , pineapple puree.Then add little by little flour mix n mix gently .

Grease a cake tin , dust it . Pour the cake mix .

Pre-heat oven n bake the cake at 180 C for 20 to 25 mts  or till the tooth pick inserted comes out clean..

Allow the cake to cool completely before frosting .

Gently Slice  the cake into half using a sharp knife  n place the other half on plate or a platform .

On one half of the cake , drizzle 4 to 6 tbsp of sugar syrup n then spread the frosted cream evenly on it , then on it  place the other half of the cake n   drizzle sugar syrup n then the frosted cream same way as the 1st half . Then apply the frosted cream evenly all over the cake . Level the cream with spatula .

 Decor the cake with border with border using frosted cream n place pineapple  pieces topped with halved cherry .
