Brinjal Pound Chutney
- Green Long Brinjal - 4
- Green chillies - 3 or according to the taste
- Coriander seeds- 1 tsp
- Coriander leaves- 1/2 fist
- Cumin seeds-1/2 tsp
- Methi Seeds/fenugreek seeds-5 numbered
- Mustard seeds- 1/2 tsp
- Urid dhal- 2 tsp
- Hing /Asafoetida- 2 pinch
- Curry leaves-1 sprig
- Tamarind- marble size
- Garlic flakes- 4
- Oil-4 tsp
- Salt to taste .
Method
Wash n cut the brinjals .
In a kadai add oil, splutter mustard seeds ,then add cumin seeds, coriander seeds, methi seeds, urid dhal , hing, slit green chillies, curry leaves , garlic flakes, coriander leaves n fry or a while . Remove it ...
In the same kadai add the chopped brinjal pieces n fry well . switch off and add tamarind ..keep covered for sometime .
Then pound the cooked mixture semi coarsely with salt .
Serve with Rice, Rottis or chapathis
