Ubbatti/ Holige/ Obbattu/Puran Poli
For the outer dough- Maida -2 cups
- turmeric powder- 1/4 th tsp
- water as required to prepare a smooth dough
- Warm Oil - 3 tblsp
For stuffing
- channa dal - 2 cup
- Jaggery- 2 cups
- cardamom powder -1/2 tsp
Method
In a wide deep vessel add maida , turmeric powder n salt . mix well , add the required amount of water ,knead well n prepare a sticky dough soak it in warm oil n knead again for a minute or two. set aside for about 3 hours .
Wash chana dhal and pressure cook it for 1 or 2 whistle in very little water ... drain the water . cool and grind it to a fine paste .( dont add water while grinding )
In a deep bottomed kadai melt jaggery with little water ...if any impurities then strain it ...
Now add the ground chana dhal paste along with melted jaggery , cardamom powder , mix well and keep stirring till it becomes a thick lump . Make lemon shaped balls of this dough n keep aside .
Meanwhile ,again knead the outer dough so that it becomes smooth n elastic . Make lemon sized ball of the maida dough ,place it on a butter paper , apply oil to the palm n flatten it into a disc shape , place the chana dhal ball in the centre and pinch the sides together around the filling n flatten with hands as thin as possible . Heat a tawa n place the above and roast on both sides with little ghee .
Eat with ghee as a dip .
Yum Yum Archu! though my stuffing comes out well my outer covering is not that great. will ry again. your recipe has tempted me.
