Mixed Vegetable Paratha

Mixed  Vegetable Paratha 

  •  Wheat flour - 2 cups 
  • Water as needed to prepare the soft dough
  • Oil-2tsp
  • Salt to taste.


For stuffing 

  • Oil-2 tsp 
  •  Potato-1
  • Onion-1
  • Carrot -1
  • Cauliflower florets ( washed n cleaned ) 1 cup
  • Spinach leaves -1/2 cup
  • Green chilly -1
  • Red chilly powder -1 tsp  
  • Garam masala powder - 1/2 tsp
  • Coriander leaves chopped - 2 tsp
  • Lime juice - 1 tsp
  • Salt to taste .


Method
In a bowl add the wheat flour, salt, oil and water ... prepare a soft dough n keep aside for 20 mts.

Pressure cook potato , carrot, cawliflower florets, spinach for 1 whistle with little water ... cool n mash it well . 

In a kadai add oil, add chopped onion n ry till pinkish red, add finely chopped green chillies n fry for sometime , add the cooked mashed vegetables , chilly powder, garam masala , coriander leaves n salt . fry well till its dry . switch off and add lime juice . mix again . 

Take small portion of the dough and flatten into a disc, place a tablespoon of the stuffing in the centre of the disc and pinch the sides together around the filing and roll out as chapathis .Roast on both sides on hot tawa ,smeared with ghee or butter .
