Mixed Vegetable Upkari
- Beans- 100 gms
- Beetroot-1 small
- Carrot- 2
- Onion -2 medium
- Knol Khol- 1 medium
- Radish -1
- Green chillies- 3
- Dry red chilly-2
- Oil- 3 tsp
- Mustard seeds-1/2 tsp
- Chana dhal-1 tsp
- Urid dhal-1 tsp
- Curry leaves - 1 sprig
- salt to taste
Method
Wash n finely chop all the vegetables . Slit green chillies.
In a kadai add oil, splutter mustard seeds, chana dhal, urid dhal, green chillies, red chillies curry leaves n fry for a minute . then add chopped onions n fry till pink ... add all the chopped vegetables , little water , salt n cook till done .
