Stuffed Capsicum


Stuffed Capsicum 

  • Capsicum - 6 preferably Small ones . 
  • Oil - 3 tblsp  


For the stuffing 
  • Potatoes - 5 Medium 
  • Onion- 1 Medium  
  • Cumin Seeds -1/2 tsp 
  • Turmeric powder-1/4 th tsp
  • Hing/Asafoetida - 2 pinch  
  • Chilly  powder- 1 tsp 
  • Garam masala powder- 1/2 tsp
  • Oil- 2 tsp 
  • Salt to taste .   

Garnish  

  • Coriander leaves chopped - 2 tsp 
  • Lemon Juice - 1 tsp  

Method 

Wash the capsicum n pat them dry . Slice  the tops of capsicum n carefully remove the seeds . Keep aside .

Chop the onions finely . 

Wash n pressure cook the potatoes. Cool , peel n mash it well .

In a  pan, add oil n  splutter cumin seeds n then add chopped onions n fry till pinkish red , add all the powders along with salt n then add the well mashed potatoes . Mix well ... Do the garnishing n mix well again . Allow to cool . 

stuff the potato mixture inside the  capsicum.

In a pan/ kadai add oil n place the stuffed capsicum one by one in the pan , cover and cook on low flame . Check in between n keep changing the sides , so that all the sides are cooked well . Place the open potato side too touching the pan n cook it well .
