Vaghareli Khicdi ( Spicy Khicdi with mixed vegetables )
- Rice- 3/4 th cup ( i used sona masoori )
- Thoor Dhal/Moong Dhal - 1/4 th cup (i used moong dhal )
- French beans , chopped to 2 inch pieces-1/2 cup
- Carrot - chopped to cubes- 1/2 cup
- Fresh green peas- 1/2 cup
- Potato- 1 small ( cubed )
- Onion - 1 medium chopped
- Green chilles- 2 chopped
- Grated Ginger- 1/4 th tsp
- Mustard seeds -1/2 tsp
- Cumin seeds- 1/2 tsp
- Hing/Asafoetida- 2 pinch
- Cinnamon - 2 inch piece
- Cloves- 4
- Bay leaf-1
- Turmeric powder- 1/4 th tsp
- Red chilly powder- 1 /2 or 1 tsp
- Water - 2 cups
- Ghee/3 tsp
- Salt to taste
Method
Wash both the rice n dhal ...
In a pressure cooker , add ghee splutter mustard seeds, cumin seeds , hing ..then add chopped onions n fry till transparent , add cloves, Cinnamon, bay leaf , grated ginger, green chillies n fry again for a while . add the vegetables along with rice n dhal n fry for a while ... add water , salt n the powders n cook for 2 or 3 whistle
Serve with Kadhi .
