Ubatti/ Holige/Puranpoli

For the Outer cover

  • Maida- 11/2 Cup
  • Turmeric Powder- 1/2 tsp 
  • Oil- 2 tsp ( to the mix the dough )
  • Oil- 1/2 cup ( To soak the prepared dough )
  • Salt a pinch


For the stuffing

  • Chana Dhal- 2 cups
  • Sugar - 2 cups
  • Water as needed to prepare the soft dough
  • Cardamom pods -2 or 3 


Method For outer covering

Sieve Maida.

In a wide deep vessel add sieved maida , turmeric powder , oil , salt n  mix well ,  add the required amount of water ,knead well n prepare a soft dough .  soak it in oil n knead again for a minute or two. set aside for about 5 hours . 

For stuffing 


 Wash chana dhal and pressure cook it for 1 or 2 whistle in very little water ... drain the water .

 In a kadai add cooked chana dhal along with sugar n cook till sugar dissolves. Turn constantly till a lump is formed and grind it to a fine paste along with peeled cardamom pods .( dont add water while grinding) 

Now to prepare puranpoli
Again knead the outer  dough so that it becomes smooth n elastic . Make lemon sized ball of the dough. 

Make equal lemon sized balls of the stuffing . 

Dust the dough with little maida n roll into small puri like disc ... place the lemon sized stuffing in the centre of the disc n pinch the sides together  around the filling n flatten it  and roll out like chapathi ..

 Heat a tawa n place the above and roast on both sides with little ghee gently in low flame .

Eat with ghee as a dip .
