Brinjal Masala

Brinjal Masala  

  • Brinjal ...4 ( i used purple long ones N Green long ones )
  • Oil..1 tbsp
  • Mustard Seeds ..1/2 tsp
  • Cumin seeds ..1/4 th tsp 
  • Onion..1 ( chopped )
  • Tomato..1 ( chopped )  
  • Turmeric powder ..1/4 th tsp 
  • Red chilly  Powder..1 tsp 
  • Coriander Powder ..1 tsp
  • Cumin powder ..1/2 tsp 
  • Garam Masala Powder ..1/2 tsp 
  • Coriander leaves chopped ..2 tsp 
  • Salt to taste .


Method 
Wash n chop the brinjal's to 2 inch pieces . Put in water for sometime . 

In a kadai add oil, splutter mustard seeds n  then add  chopped onion n cook till pinkish red . Add chopped tomato n cook till mushy , Add all the powders  n stir for a while n then add chopped brinjal ,little  water,salt  n cook till done . 

Finally garnish with coriander leaves .
