Ukde seeth, Sungta Hinga Udka Humman ,Kurle Ghassi , Bangude Puli Munchi n Bangude Tawa Fries .

Ukde seeth, Sungta Hinga Udka Humman ,Kurle Ghassi , Bangude Puli Munchi n Bangude Tawa  Fries .

 Sungta Hinga Udka Humman ( Prawns in Asafoetida coconut gravy ) 
  • Prawns - 1/2 kg 
  • Grated coconut-2 cups 
  • Roasted dry Red chillies -10 
  • Tamarind- Tamarind seed size
  • Asafoetida water- 2 tsp
  • coconut oil-2 tsp 
  • Salt to taste 

Method 
Peel n clean the prawns .

In little water , boil prawns n dont discard the water . 

Grind grated coconut, tamarind , salt and roasted chillies to a very fine paste. 

Add this ground paste to the cooked prawns , add little water n boil well . ( The gravy should be medium  consistency ) 
Switch off and add asafoetida water and oil ..mix well . 


Kurle Ghassi ( Crab cooked in coconut based gravy ) 

  • Kurlo/Crab- 6 

To grind to a fine paste 

  • Grated coconut - 1 cup 
  • Roasted dry red chilles- 4 
  • Tamarind - Tamarind seed size 
  • Salt to taste 


Seasoning 

  • Coconut oil- 3 tsp 
  • Onion - 1 


Method 
Wash , clean the crabs ... 

Chop onions for seasoning 

Grind grated coconut, roasted dry red chilles ,tamarind to a fine paste . 

In a vessel add the ground paste, little water n washed crabs along with salt n boil well , n later give the seasoning . 



Bangude Puli Munchi ( Mackrels in spicy tangy gravy )
  • Mackrels/Bangude - 5
  • Round Dry red chillies-8 to 10 or according to d spice
  • Long dry chillies -5
  • Turmeric powder-1/2 tsp 
  • Onion -2 small  1 for grinding n another one for seasoning
  • Garlic flakes-2 flakes
  • Tamarind- lemon size
  • Coriander seeds-2 tsp
  • Cumin seeds-1/2 tsp
  • Salt to taste
seasoning
  • Onion-1 small 
  • crushed garlic-2 flakes
  • Oil-2 tsp

Method 
Wash n clean the fish ( cut into desirable size)

In oil ..fry coriander seeds, cumin seeds , chillies , crushed garlic flakes ,sliced onions ... cool n grind it along with tamarind n salt  to a fine paste .

In a kadai add oil , chopped onions n fry till brown ,... add the ground paste n fry till the raw smell goes ... place the fish n give a quick boil ( dont over cook the fish ) .. tamper with crushed garlic . mix well . 

Note: This is a Semi thick gravy .



Bangude tawa fries ! Mackerels shallow fries .... 

  • Mackerels /bangude- 5 to 7 
  • Red chilly powder- 4 tsp 
  • Turmeric powder-1/2 tsp 
  • Hing/Asafoetida - 2 pinch 
  • Rice flour - 3tsp 
  • salt to taste 
  • Oil as required for shallow frying
Method 
Cut the mackerels n Clean them ... 

In a bowl add red chilly powder, hing, turmeric powder n salt ... add the cleaned mackerels n keep aside for sometime .

Heat a tawa ,smear oil .. run the marinated mackerels in rice flour n shallow fry on both sides till crisp !
