Ragi Rawa /Finger Millet Semolina Dhokla with Coriander Mint Chutney
For Dokla
- Ragi Semolina ..1 cup
- Besan Gram Flour /1 huge tblsp
- Ginger Green chilly paste ... 1 tsp
- Hing ..a pinch
- Curds..3/4 th cup
- Eno fruit salt .. 1 tsp ( use only if u want to prepare instant way n not fermenting ) ... i fermented the batter , so did not add eno fruit salt .
- Salt to taste
- Oil .. 2 tsp
- Mustard seeds ..1 tsp
- Cumin seeds ..1/2 tsp
- Green chilly chopped 2 or 3
- Curry leaves ..2 sprig's
- Dry Roasted white thil/sesame seeds ... 1 tsp
- Coriander leaves chopped ...2 tsp
- Grated coconut ... 1 tblsp
Dry roast ragi semolina in sim flame only till it becomes just warm ... Cool it ..
In a bowl add the ragi semolina, curds, ginger green chilly paste ,hing n salt ..mix well n set aside for about 2 to 3 hours for fermentation ...if u dont have time skip this method of fermentation n add eno fruit salt with little oil to the batter n mix well ! keep the batter aside for 10 mts ... sprinkle little water to the batter if its dry ...
Heat a steamer n Grease a thali n pour the batter to it n steam for 10 to 15 mts or till completely done !
Cool n cut into desired shape , pour the seasoning n then do the garnishing :)
Coriander Mint Chutney .
- Coriander Leaves ... 1/2 cup
- Mint ...1/2 cup
- Tomato .. 1 small
- Ginger ..1/2 inch piece
- jaggery a small piece
- Salt to taste
Method
Grind all the above to a paste . Remove n add salt . Serve the chutney with steaming hot Ragi semolina dhoklas ...
Note : I have used Finger Millet Semolina ( Ragi Rawa) n not powder ...
