Varahi/Barnyard Millet Masala Dosa with Potato Bhaji n Roasted Gram Chutney

 Varahi/Barnyard Millet Masala Dosa with Potato Bhaji n Roasted Gram Chutney

  • Varahi/barnyard Millet ..11/2 cups 
  • Urid dhal...1/2 cup
  •  Chana dhal .. 3 or 4 tsp
  • Methi seeds /Fenugreek seeds.. 1 tsp 
  • Thin Phovu/Beaten Rice.. 1/4 th cup 
  • Salt to taste 


 Wash n soak Varahi /Barnyard millet in  enough water ... then separately soak  urid dhal,  chana dhal n methi seeds  .... Soaking time 3 to 4 hours .... then grind varahi along with thin phova ( washed n previously soaked just for 5 mts ) to fine batter ... dont make this batter thin by adding more water ... just the right consistency  ... remove it ...add urid dhal, chana dhal n methi seeds n grind to a fine batter .... remove it n mix both the ground batter adding salt ...ferment overnight 

 Heat a dosa tawa , smear oil n spread the dosa in circular motion , add oil to the edges of dosa n roast well only on one side .

Potato Bhaji 
Potatoes-3 medium
Onion - 2 medium
Green chilles-2 or according to the taste
Turmeric powder-1/2 tsp
water -1/2  cup
Salt to taste

Mustard seeds-1/2 tsp
Urid dhal -1/4 th tsp
Curry leaves-1 sprig

Pressure cook potatoes -cool ,peel the skin n roughly mash it .

In a kadai add oil, mustard seeds, once it splutters add urid dhal,n fry for a minute . then add curry leaves , green chillies n chopped onions n fry till pink . add salt , turmeric powder , water n cook till the onions are cooked well ..once cooked add smashed potatoes n give a boil .

 Roasted Gram Chutney 
  • Roasted gram- 1/2 cup
  • Grated coconut- 1/2 cup
  • Coriander leaves- 1/4 th cup 
  • Green chillies- 2 or according to the taste 
  • Tamarind..Tamarind seed size
    Salt to taste 
  • Oil-1 tsp
  • Mustard seeds- 1 tsp 
Grind roasted gram, grated coconut , coriander leaves, green chillies , tamarind n salt n then give the seasoning .
