Carrot Halwa with Jaggery


  • Delhi carrots ( seasonal ones ) -1/2 kg
  • Milk - 2 cups
  • Jaggery powdered - 1or 11/2 cups
  • Ghee - 2 tsp
  • Pista and  Almonds- 10 each
  • Cashewnuts- 6
  • Raisins- 6
  • Saffron a few strands

Method
Soak almonds n pista for an hour n peel the skin.

wash , peel n Grate carrots .

In a deep bottomed thick kadai add the grated carrots n milk along with saffron strands  n boil it well till carrots are cooked .

Add grated jaggery n boil well till it melts .

In a pan melt ghee n add cashewnuts n raisins n pour it over the halwa .

Garnish with pista and almonds .
