Rawa Idlies with Potato Saagu, Roasted gram chutney n ghee .






Rawa Idlies with Potato Saagu, Roasted gram chutney n ghee . 
For Rawa Idlies
  • Semolina /Rawa- 1 cup
  • Curds( sour ) - 2 1/2 cups 
  • Eno fruit salt - 1/4 th  tsp 
  • Chopped coriander leaves- 1/2 cup 
  • Dry copra sliced into small pieces-1/4 th cup 
  • Cashewnut whole sliced- 10 
  • Salt to taste 

Seasoning 
  • Oil- 2 tsp
  • Mustard seeds-1  tsp
  • Chana dhal- 2tsp
  • chopped curry leaves- 3 tsp 
  • Hing/Asafoetida- 1 pinch 


Method
Soak Chana dhal in water for 1/2 an hour . 

In a kadai add oil n splutter mustard seeds , soaked chana dhal , hing, chopped curry leaves n then fry the semolina till it gives an aroma ... allow to cool .

In a bowl add whisked curds , salt, chopped coriander leaves, chopped dry coconut pieces  n cooled semolina mix along with eno fruit salt .. mix well n set aside for 20 minutes.

Grease a idly mould , place the cashewnut in middle n pour a spoonful batter n steam for 20 mts.


Potato Saggu 
  • Potatoes-4 medium
  • Onion-1 Medium
  • Green peas-1/2 cup
  •  Tomatoes-1 
  • Curry leaves-1 sprig
  • Asafetida/Hing -  a pinch
  • Turmeric powder-1/2 tsp
  • Cumin seeds-1/2 tsp
  • Mustard seeds-1 tsp
  • Red chilly powder -1tsp 
  • Oil-1 tsp
  • Chana dhal-2 tsp 
  • salt to taste     
Garnishing
  • Fresh coriander leaves .
Method 
Soak Chana dhal for 1/2 an hour. 

Pressure cook potatoes for 2 whistle, cool peel n chop them ... 

Pressure cook green peas for 1whistle .

In a kadai add oil, splutter mustard seeds , cumin , soaked chana dhal, hing, curry leaves , add chopped onion n fry till pink , add chopped tomatoes n fry till the raw smell goes . add salt, turmeric powder  n chilly powder , add cooked chopped potatoes, cooked peas n water cook till its starchy n thick  . switch off and do the garnishing

Roasted gram chutney 
  • Roasted gram- 1/2 cup
  • Grated coconut- 1/2 cup
  • Coriander leaves- 1/4 th cup 
  • Green chillies- 2 or according to the taste
    Salt to taste 

Seasoning
  • Oil-1 tsp
  • Mustard seeds- 1 tsp 

Method
Grind roasted gram, grated coconut , coriander leaves, green chillies n salt n then give the seasoning .
