Ridge gourd chutnety

Ridgegourd chutney -version 1

  • Tender ridge gourd peels- 1 cup
  • Tender ridge gourd pieces-1/4 th cup
  • Grated coconut -1/2 cup
  • Green chillies -2/4 or according to the taste
  • Cumin seeds-1/4 th tsp 
  • Hing/asafoetida- a pinch
  • Ghee-2 tsp 
  • salt to taste

Method 

In a kadai add ghee, cumin seeds, green chillies n hing  fry for a while n then add the ridge gourd skin n fry for few mts , add the tender ridge gourd pieces n stir for sometime ... remove ,cool n grind it along with grated coconut to a semi coarse paste .

Goes well with Idly/Dosa /paddu ...

  2. Lively Photo.This is my fav chutney even when its not done at home so often.The aroma of even that bitter ridge gourd turns into such a pleasant tasting chutney.The Ghee plays an important role in shaping the taste of this chutney unique.Nicely done Archie
