Chinese Fried Vegetable Wontons with Chilly Garlic Sauce

Chinese Fried Vegetable Wontons


For outer Dough 

  • Maida- 1 Cup
  • Corn flour-1/2 Cup
  • Melted Butter- 2 tsp 
  • salt- 1 Pinch
  • Hot water -1 Cup
For Stuffing 
  •  Oil -2 tblsp 
  • Ginger Finely chopped ..1 tsp
  • Garlic Finely chopped -1tsp 
  • Green chillies Finely chopped .. 2 tsp
  • Carrot Finely chopped) 1/2 Cup
  • Beans Finely chopped) ..2 tsp 
  • Cabbage Finely chopped ..1 Cup
  • Soya sauce-- 1 tsp 
  • Spring onions.. 1/2 Cup
  • Cornstarch ..2 Tblsp
  • Salt to taste 
  • Oil ..for deep frying 

Method
For outer cover In a bowl add maida ,corn flour, melted butter, pinch of salt and hot water. Mix well and make a dough. set it aside for some time .

For the filling
In a kadai add oil , then add finely chopped ginger , garlic , green chilly n fry for sometime .. then add finely chopped carrot n beans n saute for a while till soft adding salt .. Add finely chopped cabbage n cook adding soya sauce n chopped spring onion .cook till soft , add the cornstarch n mix well ..cook for few seconds .Take it out n cool .

Knead the dough again n make into small round balls n roll into thin puris . Make such thin small puris of all the balls . Place a tsp or 2 of the stuffing in the centre of each puri .., take some water n apply to the half edge n seal it by folding (crescent shape ) n then join the edges by applying little water .. do so for all the puri's that has the stuffing

Heat oil in a kadai n drop in the wontons few at a time n fry them till golden color .

Remove on tissue paper .

Chilly Garlic Sauce

  • Dry  Red Chilly ..10 /12 i used Byadagi chilly
  • Garlic Flakes ..15 (peeled )
  •  Vinegar..1/2 cup
  • Sugar - 1 tsp
  • Water ..1 cup
  • Cornflour ..1 tbsp ( mix in 1 tblsp water )
  •  Oil...3 tsp
  •  Salt to taste

Method
Boil water ,  Switch off then add the dry red chilly and let it soak for 15 mins n when cooled grind the chillies along with water, vinegar, sugar ,salt n garlic flakes to a puree .

In a kadai add oil n heat it , add the puree n boil it on medium to sim flame for 5 to 10 mts .When its hot add the chilli garlic puree , now add the cornflour mix  n quick boil ..if its too thick add little water of desired consistency n keep it medium consistency.
