Ghosale Shire Chutney / Ridge Gourd Peel's Chutney.
- Ridge gourd skin Peel's -1 cup heaped
- Grated Coconut-1/2 cup
- Green chilly- 2
- Cumin seeds-1/4 th tsp
- Garlic Flakes ..2 ( slightly crushed )
- Ghee-2 tsp
- Tamarind-Tamarind seed size
- Salt-to taste
Method
Roughly chop the ridge gourd peels .
In a pan add ghee n roast these chopped ridge gourd peels along with cumin seeds , green chilly n slightly crushed garlic flakes . Cool it .
Grind grated coconut , tamarind n ghee roasted ingredients to a paste . Remove it add salt n mix well .

- Malabar Spinach ( Vaali )-1Bunch
- Gardudde / Bottle Gourd - 1 small
- Roughly chopped Onion - 1 Medium
- Thoor dhal- 1/2 cup
To grind
- Grated Coconut- 2 cups
- Roasted red dry chilles-6 to 8 or according to the taste
- Tamarind- Tamarind seed size
- Salt to taste
Seasoning
- Oil - 2 tsp
- Chopped onion - 1 medium
Method
Roughly chop Malabar spinach with tender stem.
Peel , n chop the bottle gourd into square pieces .
Pressure cook Thur dhal , mash it well ..keep aside
Cook chopped bottle gourd in water for about 5 mts , then add chopped malabar spinach along with chopped onions ..n cook till tender .
Grind grated coconut, roasted chilles, tamarind to a fine paste .
Add the ground paste n salt to the cooked stuffs along with cooked dhal . Give a boil n then do the seasoning .
Capsium Podi / Fries
- Capsicum ..2
To make a semi solid batter
- Besan /Gram flour- 1 tblsp th cup
- Rice Flour ..1 tblsp
- Red Chilly Powder ..1 tsp
- Hing/Asafoetida..2 huge pinch
- Water as needed to prepare the batter
- Salt to taste
- Oil as required to deep fry
Method
Wash n Slice the capsicum to desired shape ..
Prepare a batter using besan, rice flour , hing, red chilly powder , salt n water to a medium consistency .
Heat oil in a deep kadai , dip the sliced capsicum in the batter n deep fry till crisp .
Vaigana Talasani ( Brinjal's sauteed in Spicy Masala )
- Any other variety of brinjal - 3
- Oil- 6 tsp
- Mustard seeds-1/2 tsp
- Hing/Asafoetida- Generous amount
- Red chilly powder-2 tsp
- Turmeric powder- 1/4 th tsp
- Salt to taste
Method
Wash n chop Brinjal's.
In a kadai add oil, splutter mustard seeds, add in hing, chilly powder, turmeric powder n chopped brinjal along with salt, cover n cook on sim flame ... stir in between .
