Ukde Seeth , Mixed Vegetable Kolmbo/ Sambar , Shevai/Rice Noodles , Ambuli Nonche /Raw Mango Pickle , Kukka Upkari / Chinese Potato stir fry , Double Beans Ambat adding Bimbul / Double Beans cooked in Coconut Based Masala adding Bilimbi n Roasted Pappodu

Ukde Seeth , Mixed Vegetable Kolmbo/ Sambar , Shevai/Rice Noodles , Ambuli Nonche /Raw Mango Pickle , Kukka Upkari / Chinese Potato stir fry , Double Beans Ambat adding Bimbul / Double Beans cooked in Coconut Based Masala adding Bilimbi 
 n Roasted Pappodu 

Mixed Vegetable Kolmbo /Sambar  
  • Mixed vegetable's  - Drumstick pieces, Brinjal , beans, capsicum, semebadane ) any veg can be added of one's choice... 2 cup's 
  • Thur Dhal- 1/2 cup
  • Onion ..1 
  • Tomato-1
  •  Sambar Powder- 2 tsp
  • Tamarind - marble size
  • Hing /Asafoetida- a pinch
  • Salt to taste 
Seasoning
  • Oil-1tsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves-  1 sprig
Garnishing
  • Coriander leaves
Method 
Wash and chop vegetables to 2 inch big pieces . 
Soak Thur dhal for 10 mts n then pressure cook it ..cool n churn it well . 

Boil vegetables , chopped onion n chopped tomato . 
Soak tamarind in water for 20 mts n extract juice n to it add sambar powder n mix well .


In a vessel add the cooked stuffs , tamarind sambar powder mix n salt . cook well , Add hing water . mix well . Then do the seasoning  n then garnish .


Shevai/ Rice Noodles 
  • Raw Rice-2 cups
  • Grated fresh coconut-2 cup's
  • Coconut oil -for greasing
  • Salt to taste .

Method:
Soak the rice in water for around 3-4 hrs.

Grind it to a smooth paste with grated coconut and salt, adding required amount of water. 

In a kadai add the ground batter n heat it ... stirring continuously till all the water evaporates n the dough becomes dry .

Make balls of the dough and steam it for 15 to 20 minutes.

Grease the shevai mould with coconut oil n place the steamed balls when still warm n press it ,then collect the emerging sevai on a greased plate held underneath. .. repeat for all the remaining steamed balls .

Spread a clean wet cloth ,n place the shevai's on it ...



Kukka Upkari ( Chinese Potato stir fry )
  • Kukka/ Chinese Potato.. 1/4 th kg 
  • Dry red chillies- 6 or according to the spice 
  • Oil-2 tsp
  • Mustard seeds-1/2 tsp
  • Grated coconut- 1/4 th cup ( finely grated ) 
  • Water as needed to cook 
  • Salt to taste 
Method
Wash the Chinese potatoes well , n remove the mud on it ... Put it in a shack cloth n beat it well . This helps in easy removal of the skin . Put them in water n scrap the extra skin with a knife or backside of the spoon . 

Chop them into longish  pieces.

In a kadai add oil n splutter mustard seeds , add torn dry red chillies, add chopped chinese potato pieces along with little water n salt .Cover n cook well till done .Add grated coconut 
, stir well .  

Double Beans Ambat adding Bimbul / Double Beans cooked in Coconut Based Masala adding Bilimbi 

  • Jeev Double Beans /Tender Double Beans  ... 1 cup 
  • Onion roughly chopped ..1 
  • Bilmbul/Bilimbi... 2 
To grind to a fine paste 
  • Grated coconut.. 1 cup
  • Roasted dry red chilly  .. 4 
  • Salt to taste 
Season
  • Oil..2 tsp
  • Onion chopped ..1 
Method
Wash tender double  beans n pressure cook it with chopped onion for just one whistle with little water . 

cook bimbul in little water till soft but not mushy . 

Grind all the ingredients meant to grind to a fine paste 

Add the ground paste to the cooked stuffs n boil well , then give the seasoning .
