White Rice , Pathrado, Puli Koddel, Tomato Dalithoy , Raddish Podi with Ground Masala n Rawa Carrot Ladoo .

White Rice , Pathrado, Puli Koddel, Tomato Dalithoy , Raddish Podi with Ground Masala n Rawa Carrot Ladoo .


 Pathrado 
  • Raw Rice- 1cup
  • Thur dhal-1/2 fist 
  • Grated Coconut -2 glass 
  • Hing/Asafoetida-small piece 
  • Tamarind -marble size 
  • Roasted dry red chilly -10 /12  or according to the taste 
  • Salt a required 
  • Pathrade paan /colocasia leaves -14 /18 tender ones ..
Method 
Soak rice n thur dhal for 2 hours .  

Grind grated coconut, roasted dry chillies,hing n tamarind to a fine paste ... then add soaked rice n thur dhal n grind to a coarse paste (  without adding water . Can sprinkle water if required ! take the batter and add salt ! 


Remove fibre from the leaves n wash thoroughly .


Place a huge leaf on the wooden board with back surface up and stalk end towards you . smear ground masala all over ,place smaller leaf over it and repeat the procedure for 4 to 5 leaves ,and fold and roll them ,smear the fold with paste ,d shape of a cylinder .. n steam it for 20 mts . 

cool n cut into slices of desired thickness . 

serve with coconut oil 

Puli Koddel ! ( sweet, sour, and spicy coconut gravy of Ash gourd ) 

  • Ash gourd-1/4 th kg
  • Grated coconut- 3 tbsp
  • Red chillies-8
  • Coriander seeds-3 tsp
  • Fenugreek seeds-2 pinch 
  • Mustard seeds-1/4 th tsp 
  • Cumin seeds-1/4 th tsp
  •  Black gram dal /Urad dal,-2 tsp
  •  Bengal gram dal /Channa dal,-2 tsp
  • Turmeric powder-1/4 tsp
  • Raw Rice- 1 tsp
  • Jaggery- Marble size 
  • Thick Tamarind pulp-2 tsp 
  •  Til (Sesame seeds)-1tbsp
  • Salt- to taste
  Seasoning
  • Oil-1tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves -1 sprig .

Method Wash, peel and cut the ash gourd into medium pieces and boil it with salt ,jaggery and tamarind pulp . Dont over cook it . 

In a kadai, dry fry ( DONT ADD OIL ) red dry chillies, grated  coconut , coriander seeds, urad dal, channa dal, mustard seeds, fenugreek , raw rice, cumin seeds, thil  separately till they are golden.


Grind together all the dry roasted ingredients along with turmeric powder to a coarse powder  .


Add the ground power to the cooked ash gourd , add little water n then boil well !  

Finally give the seasoning .


Tomato Dalithoy

  • Thoor Dhal..1 cup
  • Tomatoes..4 
  • Hing/Asafoetida.. 2 pinch
  • Green Chilly - 3, chopped  
  • Turmeric powder..1/4 th tsp 
  • Salt to taste 


Season 

  • Ghee..2 tsp
  • Mustard seeds..1 tsp
  • Red chilly  .. 2 Broken 
  • Curry leaves ..1 sprig 

Garnish 
Chopped coriander leaves . 



Method

Wash n pressure cook thoor dhal, chopped tomatoes ,Green chilly . hing n turmeric powder .. Mash it well . Add salt n water for right consistency, boil , season n garnish . 



Radish Podi with Ground Masala 
  • Radish ... 3 
To Grind 
  • Raw Rice..1 cup 
  • Coriander seeds.. 2 tsp 
  • Dry red chillies... 6 to 8
  • Hing ... 
  • Salt to taste 
  • Oil for deep fry 

Method 

Wash Radish , pat dry n cut lengthwise . Crush it slightly , apply salt n keep aside for sometime . 

Soak raw rice for about an hour . 

 Grind raw rice, coriander seeds, dry red chillies , hing to a fine paste adding very little water .( the paste has to be thick ) 

Squeeze the crushed radish , apply the ground paste , keep aside only for 5 mts . 


Deep fry till crisp . 



Rawa Carrot Ladoo .


  • Rawa- 1 cup
  • Sugar-1/3 rd cup
  • Grated carrot- 2 tbsp
  • Ghee- 3 tbsp
  • Grated coconut-2 tbsp
  • Milk-1/4 th cup
  • Cashewnuts- 10 (halved )
  • Raisins-12 
  • Cardamom powder- 1/2 tsp 


Method
Heat ghee in a kadai and fry raisins on low flame , remove once they puff up . Toss in cashewnuts, fry n remove. Roast the grated coconut for a while n remove . Add the grated carrots n fry till all the water evaporates . Remove n keep aside . 

Add the rawa to the remaining  ghee n  roast till the color changes very lightly n you get a nice aroma , then add the sugar n continue to cook for 2 mts .Add milk , mix well n continue to stir . Add all the above roasted stuffs n mix well, add the cardamom powder n mix again  ... grease the palm with ghee n bind the mix into round shaped Ladoo .
