Hasi Kadale Masala Usli / Raw Groundnut Spicy Masala .
- Raw Groundnut ...1 cup
To roast n grind to a powder .
- Oil..2 tsp
- Coriander seeds.. 1 tsp
- Chana dhal..1 tsp
- Dry red chilly ... 2 or according to the spice .
- Grated coconut...fresh or dried copra ... 1tbsp . ( no need to roast ) i used dry copra which was grated
- Salt to taste .
Seasoning
- Oil..2 tsp
- Mustard seeds .. 1/2 tsp
- Hing/Asafoetida..2 pinch
- Curry leaves..1 sprig
Method
Wash n soak raw groundnuts for about 1/2 an hour to 1 hour .
Pressure cook it for about 10 to 12 whistles till its soft but not mushy .discard the water .
In a pan add oil n roast coriander seeds, chana dhal, n dry red chilly ... once cool ,grind it to a powder with salt n grated coconut .
In a kadai add oil, splutter mustard seeds, add hing n curry leaves stir for a few seconds, then add the powdered masala n stir again for few seconds ..add in pressure cooked raw groundnuts n mix well .
Moong Dhal Carrot Kosamburi
- Moong Dhal .. 1/4 th cup
- Carrot ..3
- Lemon ..1/2 slice
- Green Chilly finely chopped ..3
- Grated Coconut ..2 tblsp
- Coriander Leaves Chopped ..2 tsp
- Hing/Asafoetida water ..1/2 tsp
- Salt to taste
Season
- Oil ..2 tsp
- Mustard seeds ..1/2 tsp
- Curry leaves ..1 sprig
Wash Moong dhal n soak in water for about 1/2 an hour ...drain it ..
Wash n grate carrots .
In a bowl add soaked drained moong dhal, grated carrot's , finely chopped green chilly , chopped coriander leaves , grated coconut, hing water , salt ... then add lime juice n give the seasoning ..Mix well n serve .
Ground Masala Majjige/Spicy Butter Milk
- Thick curd ..1 cup
- Water..2 cup's
- Green chilly ..1 (Chopped )
- Ginger( Chopped ) ..1/2 inch
- Coriander leaves--- 2 tsp chopped roughly
- Salt as per your taste.
Season
- Oil ..1 tsp
- Mustard seeds ..1/2 tsp
- Curry leaves ..1 sprig
Method
Add curd , water , chopped green chilly, ginger n coriander leaves n blend it . Remove in a bowl n season .
Paanaka
- Water..6 cups
- Jaggery ..11/2 cup ( powdered )
- Black pepper corns..3 tsp
- Fresh ginger..1 inch piece
- Green cardamom pods with skin .. 5
- Lemon ... 3
Method
In a bowl add water . To it add powdered jaggery n allow it to melt .
Pound peppercorns, ginger , green cardamom to a fine mixture .
Add the pound ingredients to the above jaggery water . Keep covered so as the jaggery n the pound mixture infuses . Add lemon juice ..Stir well .
Serve chilled .
