Doodh Paak /Milk Rice Kheer


Doodh Paak /Milk Rice Kheer 
  • Rice .. Basmathi or any flavoured rice ..1/2 cup ( i used Doodh Malai rice ) 
  • Sabudana .1/2 cup 
  • Full fat Milk ..6 cup's ( i used orange color pack Nandini Milk  ) \
  • Sugar ..1 cup adjust as per sweetness
  • Saffron strands ..1 tsp
  • Almonds ..6
  • Cashew nuts halved ..10
  • Raisins ..10 
  • Cardamon Powder .. 1/2 tsp 


Method
Wash rice n Sabudana n cook it in little water till soft . 

Boil water n add almonds , cashew nuts , raisins n set aside for about 1/2 an hour .

Remove the skin of almonds n slice it 

In 1/4 th cup boiled hot milk add the saffron strands ..set aside for 1/2 an hour . 

Boil Milk n then add sugar n stir .. Add the cooked rice n sabudana n cook again stirring well till it thickens . The consistency should be semi thick .

 Remove it , add the cardamon powder, saffron milk n dry fruits . Mix well . 

Serve warm or chilled . 

Note : The authentic Doodh paak ... Rice n sabudana has to be cooked in milk n not in water ..
